For much of his career, one of Australia’s best-known pastry chefs, Robert Coco, has travelled the world perfecting the techniques and flavours that make up his much-loved creations. Inspired by the work of Neil Perry and the team at Sydney’s Rockpool Group in the early years of his working life, Robert found his passion and has since gone on to prepare exquisite dishes for royalty and celebrities in some of the globe’s exotic locations.
Working in luxury hotels, restaurants and patisseries, Robert has been located in Japan, France, Italy, Switzerland, Thailand, Mauritius, Malaysia and Maldives. He has tempted the palates of luminaries including Queen Elizabeth, Prince William, Roger Federer, Gerard Depardieu, Steve Martin, the King and Queen of Thailand, Emperor Akihito of Japan, Keanu Reeves, Michael Schumacher, the Queen Mother of Bhutan, Alain Ducasse, Gordon Ramsay, Andrea Bocelli and Brooke Shields. Along the way, he has also represented Australia at the world’s most prestigious competition of its type, Coupe du Monde de la Pâtisserie – the World Pastry Cup – in Lyon, France.
In 2006, Robert opened Cavallini Bakery & Patisserie in Fitzroy North, and for more than a decade has been sharing his love of fine pastry with Melburnians. He still loves baking as much as when he began his extraordinary career, and now teaches others the fine art of baking.
